Ingredients required: Brussels sprouts, leeks, garlic, olive oil, heavy cream, gruyère cheese, parmesan, fresh thyme, nutmeg, and panko breadcrumbs.
- Preheat the oven to 400°F. Set aside a 9x13 baking dish that’s been greased with cooking spray or butter.
- Heat 2 tablespoons of olive oil and add thinly sliced leeks. Let this cook over medium heat for 4 minutes. Add garlic and cook for 1 more minute.
- Transfer the cooked leeks to another bowl and mix with thinly sliced brussels sprouts.
- In the same skillet, add the cream, gruyere, 1/4 cup parmesan, salt, pepper, thyme and nutmeg. Stir this continuously and bring it to a simmer. This is ready for the next step when the cheese is melted and the sauce thickens.
- Pour the mixture over the bowl of brussels sprouts and leeks. Mix well until everything is well-coated.
- Transfer the mixture to the baking tin and place it in the oven to cook.
- For added crunch, mix panko with parmesan and oil and scatter the crumb mixture over the baking dish.
- Return the brussels sprouts to the oven and cook until it's golden brown.
