Method:
1.Line a rectangular baking tin with cling wrap and oil it. Cover gelatine with cold water and leave to soften for 10min.
2. Slowly heat the marmalade in a pan, whisking it until melted and smooth, remove from the heat. Then, squeeze the excess water from the gelatine and whisk the gelatine into the marmalade until they're melted together. Afterwards, pour the mix into the tin and leave it to cool to at room temperature, once cool pop it into the fridge for 25 minutes or until firm.
3. Remove the jelly from the pan and set it aside to heat to room temperature. Preheat the oven to 170°C. Then, in a large bowl, beat together the butter and caster sugar with a whisk until it goes pale and fluffy. Afterwards, you can beat in the eggsone by one, mixing well after each addition.
4. Fold the flour into the wet mix, then add the orange zest and the orange juice to make a batter. Then, scrape the batter into the tin. Bake for 45-50min. Once done, use a cake rack to flip your jaffa creations the right way up, lift off the tin and let your cake cool.
For the topping:
5. While the cake is cooling, melt the chocolateusing a bowl in a hot water bath, stirring the chocolate until smooth. Remove the bowl from the heat and mix in the oil. Then leave to cool until the mix has reached room temperature.
6. Carefully transfer the cake to a chopping board and then spread a little marmalade on the top. Afterwards, you can flip the jelly onto the cake and take off the cling wrap. Gently press the jelly to make it stick and then trim off any overhanging bits with a pair of kitchen scissors.
7. Slowly pour the chocolatemix on top of the jelly letting it run down the sides of the cake. Then, let it sit for 30 minutes. Afterwards, a cake rack can be lightly pressed into the cake to make a neat lattice pattern. Otherwise, leave the cake to cool completely before eating.
