Christmas is fast approaching and if you want to make everyone happy on Christmas Eve, you mustn’t forget about little things for them to nibble on. Here is a simple, yet quite fancy, little recipe that anyone could make: mini salmon roll-ups. These roll-ups are made with white bread, cream cheese and smoked salmon but you could even swap out the cream cheese for an herb cheese or even taramasalata if you wanted.
For a vegetarian option or to make them suitable for pregnant women, you could also swap out the salmon for slices of cucumber.
Here’s the recipe!
Ingredients:
· 6 slices of white bread
· 6 slices of salmon
· 300g cream cheese
· 1 lemon
· Fish eggs or caviar to garnish (optional)
Instructions:
1. Spread the cream cheese on each slice of bread.
2. Lay a slice of salmon on each slice of bread.
3. Tightly roll up the bread and then wrap the roll in cling film to hold it together.
4. Chill in the refrigerator for 30 minutes.
5. Cut up the salmon rolls into little bite-size pieces.
6. Decorate the rolls with slices of lemon and the fish eggs or caviar.
